Without a doubt, this fluffy and moist corn cake pleases even the most demanding palates!

Ingredients

  • 3 eggs

  • 1 tablespoon of chemical yeast

  • 1 can of corn without water

  • 1 can of coconut milk

  • 1 can of sugar

  • 1 can and 1/2 of mimoso cornmeal

  • 1/2 can of oil

  • 50g grated coconut

Preparation mode

  • Add the eggs, corn without water, oil, sugar to the blender and blend for 5 minutes.
  • Add the coconut milk, mimoso cornmeal and beat for another 2 minutes.
  • Add the yeast, grated coconut and beat just to mix.
  • Transfer the dough to a greased baking tray sprinkled with cornmeal.
  • Bake the cake for around 40 minutes in the preheated oven at 180º₢.
  • Unmold the cake after it has cooled and it is ready to serve.
