Without a doubt, this fluffy and moist corn cake pleases even the most demanding palates!
Ingredients

3 eggs

1 tablespoon of chemical yeast

1 can of corn without water

1 can of coconut milk
-
1 can of sugar

1 can and 1/2 of mimoso cornmeal

1/2 can of oil

50g grated coconut
Preparation mode
- Add the eggs, corn without water, oil, sugar to the blender and blend for 5 minutes.
- Add the coconut milk, mimoso cornmeal and beat for another 2 minutes.
- Add the yeast, grated coconut and beat just to mix.
- Transfer the dough to a greased baking tray sprinkled with cornmeal.
- Bake the cake for around 40 minutes in the preheated oven at 180º₢.
- Unmold the cake after it has cooled and it is ready to serve.
