  • 500g beef tripe, cleaned and cut into strips

  • 500g beef mocotó cut into pieces

  • 200g smoked pepperoni sausage, cut into slices

  • 1 large chopped onion

  • 3 cloves of garlic, chopped

  • 2 chopped tomatoes

  • 2 bay leaves

  • 1 chopped green pepper

  • 1 bunch of green chillies (parsley and chives), chopped

  • 1 lemon juice

  • Salt and pepper to taste

  • Oil or olive oil for sautéing

Preparation mode

  • In a pressure cooker, place the beef tripe and mocotó. Cover with water and place over high heat to cook for about 30 minutes after the pressure starts. Turn off the heat and wait for all the pressure to release before opening the pan. Drain the cooking water and reserve the cooked ingredients.
  • In another pan, heat a little oil or olive oil and sauté the onion and garlic until golden.
  • Add the pepperoni sausage and let it fry for a few minutes until it is lightly golden.
  • Add the cooked beef tripe and mocotó to the pan and mix well.
  • Add the chopped tomatoes, green pepper, bay leaves and season with salt and pepper to taste.
  • Cover with enough hot water to cover all the ingredients and cook over low heat for about 1 hour, or until the ingredients are soft and the broth has reduced and thickened.
  • Before serving, squeeze the lemon juice over the tripe and sprinkle the chopped green chilli on top.
  • Tripe is traditionally served accompanied by white rice and a good pepper sauce.
