  • 3 small eggs (125g)

  • 3 slices of mozzarella cheese, chopped (60g)

  • 2 cups (tea) of sour cassava starch (270g)

  • 1 teaspoon of salt (08g or amount to taste)

  • 1 packet of grated or freshly grated Parmesan cheese (50g)

  • 3/4 cup (tea) mineral water (150 ml)

  • 1/2 cup (tea) oil (90 ml)

Preparation mode

  • In the blender add the eggs, water, oil, salt, grated parmesan cheese and cassava starch.
  • Beat for 2 minutes, pour the dough into a 30cm x 18cm rectangular pan greased with oil and place the grated mozzarella on top.
  • Bake in a preheated oven at 180°₢ for approximately 40 minutes or until the biscuit is well browned.
  • Wait for it to cool a little, unmold it if you prefer and the rollercoaster cookie is ready to serve.
