For your pasta salad to be very diverse and tasty, use these ingredients below and follow the instructions.


  • 250g of pasta (penne, fusilli, or other of your choice)

  • 1 cup halved cherry tomatoes

  • 1 cup diced cucumber

  • 1 cup diced red bell pepper

  • 1 cup cooked corn

  • 1/2 cup sliced ​​black olives

  • 1/4 cup chopped red onion

  • 1/4 cup chopped fresh parsley

  • 1/4 cup crumbled feta cheese (optional)

  • Salt and pepper to taste

  • Sauce
  • 1/4 cup olive oil

  • 2 tablespoons of lemon juice

  • 2 tablespoons balsamic vinegar

  • 1 clove of minced garlic

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste

  • Cook the pasta according to package directions in salted water. Drain and let cool completely.
  • In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red bell pepper, corn, olives, red onion and parsley.
  • In a small pitcher, combine olive oil, lemon juice, balsamic vinegar, minced garlic and Dijon mustard. Season with salt and pepper to taste and stir well to emulsify the sauce.
  • Pour dressing over pasta salad and toss to coat all ingredients.
  • If desired, add crumbled feta cheese on top of the salad.
  • Refrigerate the macaroni salad for at least 1 hour before serving to allow the flavors to blend.
