For your pasta salad to be very diverse and tasty, use these ingredients below and follow the instructions.
Ingredients

250g of pasta (penne, fusilli, or other of your choice)

1 cup halved cherry tomatoes

1 cup diced cucumber

1 cup diced red bell pepper

1 cup cooked corn

1/2 cup sliced ​​black olives

1/4 cup chopped red onion
-
1/4 cup chopped fresh parsley

1/4 cup crumbled feta cheese (optional)

Salt and pepper to taste
- Sauce
-
1/4 cup olive oil
-
2 tablespoons of lemon juice
-
2 tablespoons balsamic vinegar
-
1 clove of minced garlic
-
1 teaspoon Dijon mustard

Salt and pepper to taste

- Cook the pasta according to package directions in salted water. Drain and let cool completely.
- In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red bell pepper, corn, olives, red onion and parsley.
- In a small pitcher, combine olive oil, lemon juice, balsamic vinegar, minced garlic and Dijon mustard. Season with salt and pepper to taste and stir well to emulsify the sauce.
- Pour dressing over pasta salad and toss to coat all ingredients.
- If desired, add crumbled feta cheese on top of the salad.
- Refrigerate the macaroni salad for at least 1 hour before serving to allow the flavors to blend.
