  • 1 cup of warm water

  • 500g ground meat (can be beef, lamb or a mixture of the two)

  • 1 medium onion chopped

  • 2 cloves of garlic, chopped

  • 1/2 cup chopped fresh mint

  • 1/2 cup chopped fresh parsley

  • 1 teaspoon cumin powder

  • 1 teaspoon of Syrian pepper (optional)

  • Salt to taste

  • Black pepper to taste

  • For the filling (optional)
  • 1/2 cup chopped walnuts

  • 1/2 cup raisins

Preparation mode

  • Start by preparing the wheat for kibbeh. Place the wheat in a bowl and cover with warm water. Let it rest for about 30 minutes, or until the wheat absorbs all the water and becomes soft. Then drain any excess water and set aside.
  • While the wheat is soaking, prepare the filling, if desired. Mix the chopped walnuts and raisins in a small bowl and set aside.
  • In another bowl, mix the ground beef, chopped onion, chopped garlic, chopped mint, chopped parsley, cumin powder, syrian pepper (if using), salt and black pepper to taste. . Mix all ingredients well until you obtain a homogeneous dough.
  • Preheat the oven to 180°C.
  • In a rectangular or square pan, grease it with a little olive oil or oil.
  • Now, assemble the oven kibbeh: spread half of the meat mixture into the pan, pressing to form an even layer.
  • Then add the nut and raisin filling (if using) over the meat layer.
  • Cover the filling with the drained kibbeh wheat, pressing to form another uniform layer.
  • Finish with the second half of the meat dough, spreading it over the wheat and pressing to seal the kibbeh.
  • Cut the kibbeh into diamonds or squares, making shallow cuts on the top.
  • Drizzle the top with a little olive oil.
  • Bake in the preheated oven for around 30-40 minutes, or until the kibbeh is golden and cooked through.
  • Remove from the oven and serve hot. It can be accompanied by lemon, tahini, pita bread, or salad.
