  • 2 cups of grated carrot

  • 1 cup vegetable oil

  • 3 eggs

  • 2 cups of sugar

  • 2 cups of wheat flour

  • 1 teaspoon of baking powder

  • 1 teaspoon of baking soda

  • 1 teaspoon of cinnamon powder

  • 1/2 teaspoon cardamom powder

  • 1/2 teaspoon salt

  • 200g de cream cheese

  • 1/4 cup softened butter

  • 2 cups of powdered sugar

  • 1 teaspoon vanilla extract

  • Chopped walnuts or almonds (optional, for decoration)

Preparation mode

  • Preheat the oven to 180°C. Grease and flour a cake pan.
  • In a large bowl, mix the grated carrot, oil, eggs and sugar. Stir well until you obtain a homogeneous mixture.
  • In another bowl, sift the wheat flour, baking powder, baking soda, cinnamon powder, cardamom powder and salt. Add this mixture to the liquid ingredients and stir until well combined.
  • Pour the batter into the prepared pan and bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake is baking, prepare the frosting. In a bowl, beat the cream cheese, butter, icing sugar and vanilla until light and fluffy.
  • After removing the cake from the oven and letting it cool completely, spread the frosting over the cake.
  • If desired, decorate with chopped walnuts or almonds.
