Creamy Sweet Rice

1 cup of white rice
2 cups of water
4 cups of milk
1 can of condensed milk (approximately 395g)
1 teaspoon vanilla essence (optional)

- Wash the rice well under running water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky.
- In a large pan, place the washed rice and 2 cups of water. Place over medium heat and cook until the water is absorbed and the rice is tender, but still a little al dente.
- Add the milk to the pan with the cooked rice. Mix well and cook over medium-low heat, stirring frequently to prevent the rice from sticking to the bottom of the pan.
- As the milk is absorbed into the rice, continue adding more milk little by little. Continue stirring regularly to ensure the rice cooks evenly and reaches a creamy consistency.
- When the rice is well cooked and the mixture has a creamy texture, add the condensed milk and vanilla essence (if using). Mix well to incorporate.
- Continue cooking for a few more minutes, stirring constantly, until the rice pudding is very creamy and the flavors are combined.
- Remove the pan from the heat and let the rice pudding rest for a few minutes before serving.
- When serving, place the rice pudding in individual bowls or on a large plate. Sprinkle ground cinnamon on top to add flavor and decorate.
- Rice pudding can be served hot, warm or cold, depending on your preference.
