Check the list of ingredients needed to make your Chicken Stock, following the preparation instructions.


  • 1 whole chicken or approximately 1 kg of chicken parts (such as thighs, drumsticks, wings)

  • 2 large carrots, cut into large pieces

  • 2 celery stalks, cut into large pieces

  • 1 large onion, cut in half

  • 3 whole garlic cloves

  • 1 bouquet of fresh sauce

  • 1 bay leaf

  • 10 black peppercorns

  • Salt to taste

  • Enough water to cover the ingredients in the pan

Preparation mode

  • Wash the chicken and vegetables well.
  • In a large pan, place the chicken, carrots, celery, onion, garlic, parsley, bay leaf and black peppercorns.
  • Cover the ingredients with cold water, leaving about 2-3 cm above the level of the ingredients.
  • Place the pan over medium-high heat and bring to a boil.
  • Once it boils, lower the heat to medium-low and let it cook for about 1 hour, eventually removing the foam that forms on the surface.
  • After 1 hour, remove the chicken from the pan and reserve to use in other recipes. If you prefer, you can shred the meat and add it to the broth.
  • Strain the broth through a fine sieve or muslin cloth to remove all solids.
  • Season the broth with salt to taste.
  • The broth is ready to use in soups, risottos, sauces or any other recipe that calls for chicken broth.
