Below are the ingredients used to prepare your baked cod. Follow the instructions for preparation.


  • 800g of desalted cod loin

  • 1kg of potatoes

  • 3 medium onions

  • 4 cloves of garlic

  • 2 red peppers

  • 1/2 cup extra virgin olive oil

  • 1/2 cup pitted black olives

  • 2 bay leaves

  • Black pepper to taste

  • Salt to taste

  • Chopped parsley to taste

  • 1 lemon (to decorate)

Preparation mode

  • Preheat the oven to 200°C.
  • Peel the potatoes and cut them into medium slices. Cook in boiling water until almost cooked. Drain and set aside.
  • In a large pan, heat half of the olive oil and brown the chopped onions and garlic.
  • Add the peppers cut into strips and sauté for a few minutes.
  • In a baking dish, arrange the cooked potatoes on the bottom.
  • On top of the potatoes, place the sautéed onion, garlic and pepper.
  • Season the cod with salt and black pepper to taste and arrange it over the potatoes and the stew.
  • Drizzle with the remaining olive oil.
  • Add the bay leaves and black olives.
  • Cover the dish with aluminum foil and bake in the preheated oven for about 30 minutes.
  • Remove the aluminum foil and bake for another 15 minutes, or until the cod is cooked and golden.
  • Remove from the oven and sprinkle with chopped parsley.
  • Serve the cod in the oven hot, accompanied by lemon slices.
