Below are the ingredients used to prepare your baked cod. Follow the instructions for preparation.
Ingredients

800g of desalted cod loin

1kg of potatoes

3 medium onions
-
4 cloves of garlic

2 red peppers
-
1/2 cup extra virgin olive oil
-
1/2 cup pitted black olives
-
2 bay leaves
-
Black pepper to taste
-
Salt to taste
-
Chopped parsley to taste
-
1 lemon (to decorate)
Preparation mode
- Preheat the oven to 200°C.
- Peel the potatoes and cut them into medium slices. Cook in boiling water until almost cooked. Drain and set aside.
- In a large pan, heat half of the olive oil and brown the chopped onions and garlic.
- Add the peppers cut into strips and sauté for a few minutes.
- In a baking dish, arrange the cooked potatoes on the bottom.
- On top of the potatoes, place the sautéed onion, garlic and pepper.
- Season the cod with salt and black pepper to taste and arrange it over the potatoes and the stew.
- Drizzle with the remaining olive oil.
- Add the bay leaves and black olives.
- Cover the dish with aluminum foil and bake in the preheated oven for about 30 minutes.
- Remove the aluminum foil and bake for another 15 minutes, or until the cod is cooked and golden.
- Remove from the oven and sprinkle with chopped parsley.
- Serve the cod in the oven hot, accompanied by lemon slices.
