  • 2 large carrots, peeled and cut into slices

  • 2 celery stalks, cut into pieces

  • 1 medium onion, chopped

  • 2 garlic cloves, chopped

  • 1 medium zucchini, cut into cubes

  • 1 cup chopped kale

  • 1 cup chopped broccoli

  • 1 cup chopped cauliflower

  • 1 can (400g) of diced tomatoes

  • 4 cups vegetable broth (or water)

  • 1 teaspoon of olive oil

  • Salt and pepper to taste

  • Fresh or dried seasonings to taste (e.g. basil, thyme, oregano)

Preparation mode

  • In a large pan, heat the olive oil over medium heat.
  • Add the chopped onion and garlic and sautĂ© until soft and lightly browned.
  • Add the carrots, celery, zucchini, broccoli, cauliflower and tomatoes. Cook for a few minutes, stirring occasionally.
  • Pour the vegetable broth into the pan and season with salt, pepper and other seasonings of your choice.
  • Bring the soup to a boil, then reduce the heat to medium-low. Cover the pan and let it cook for about 20-25 minutes, or until the vegetables are soft.
  • Add the chopped cabbage and cook for another 5 minutes.
  • Taste and adjust seasoning if necessary.
  • Serve hot and enjoy!
