Sweet potato cake

Ingredients

2 cups cooked and mashed sweet potatoes

1 cup vegetable oil

4 eggs

2 cups of sugar

2 cups of wheat flour

1 tablespoon baking powder

1 teaspoon of cinnamon powder (optional)

1/2 teaspoon nutmeg (optional)

A bit of salt
Preparation mode
- Preheat the oven to 180°C. Grease and flour a cake pan.
- In a large bowl, mix the mashed sweet potatoes, oil, eggs and sugar. Stir well until you obtain a homogeneous mixture.
- In another bowl, mix the wheat flour, baking powder, cinnamon, nutmeg and salt.
- Gradually add the dry ingredients to the sweet potato mixture, stirring well to combine all ingredients.
- Pour the batter into the prepared pan and level the surface.
- Bake in the preheated oven for approximately 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
