Ingredients

4 loaves of stale French bread (or about 200g of bread)

1 liter of milk

1 cup of sugar

3 eggs

1 teaspoon vanilla essence

1/2 cup raisins (optional)

1 cup sugar (for the caramel)
Preparation mode
- Place 1 cup of sugar in a saucepan and heat over low heat.
- Stir until the sugar melts and turns golden brown.
- Pour the caramel into a pudding mold, spreading it evenly over the bottom and sides. Set aside.
- Tear the bread into small pieces and place them in a large bowl.
- Heat the milk and pour over the bread, leaving it to soak for about 15 minutes to soften.
- In a blender, beat the eggs, 1 cup of sugar and the vanilla essence.
- Add the bread and milk mixture to the blender and blend until smooth.
- If desired, add raisins to the mixture and stir with a spoon.
- Pour the mixture into the caramelized pan.
- Preheat the oven to 180°C.
- Bake the pudding in a bain-marie (place the pudding mold inside a larger baking tray with hot water).
- Bake for about 1 hour or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool completely before unmolding.
- To unmold, run a knife around the edges of the pan and turn the pudding out onto a plate.
