1 kg of clean, scaleless sardines

2 large onions, cut into rings

3 ripe tomatoes, cut into slices

2 peppers (red and green), cut into strips

4 garlic cloves, chopped

1/2 cup olive oil

1/2 cup dry white wine

1 lemon juice

Salt and pepper to taste

1 bay leaf

Parsley and coriander to taste (optional)

Enough water to cover the sardines in the pressure cooker
Preparation mode
- Season the sardines with salt, pepper and lemon juice. Set aside for a few minutes.
- In a pressure cooker, add half the oil to the bottom.
- Make a layer with half the onions, tomatoes, peppers and garlic.
- Arrange the sardines on this layer.
- Repeat the process with the remaining onions, tomatoes, peppers and garlic.
- Drizzle with the remaining olive oil, add the bay leaf, parsley and coriander (if using).
- Pour the white wine over the ingredients in the pan.
- Add enough water to cover the sardines.
- Cover the pressure cooker and place over high heat.
