Ingredients

  • 1 medium pumpkin (approximately 1.5 kg), peeled and cut into cubes

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 4 cups vegetable or chicken broth

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • A pinch of nutmeg (optional)

  • Fresh cream or Greek yogurt for serving (optional)

  • Toasted pumpkin seeds for garnish (optional)

Preparation mode

  • In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft and lightly browned, about 5 minutes.
  • Add the pumpkin cubes to the pan and sauté for a few more minutes, stirring occasionally.
  • Pour the vegetable or chicken broth over the squash in the pot. Bring to a boil, then reduce the heat to medium-low. Cover the pot and simmer for about 20-25 minutes, or until the squash is very tender.
