Ingredients

  • 1 kg of potatoes (preferably firm-fleshed potatoes, such as pink potatoes)

  • 3 eggs, boiled and chopped

  • 1/2 cup chopped celery

  • 1/2 cup chopped red onion

  • 1/4 cup chopped pickles

  • 1/2 cup mayonnaise

  • 2 tablespoons mustard

  • 2 tablespoons white wine vinegar

  • Salt and pepper to taste

  • Fresh chopped sauce to decorate

Preparation mode

  • Wash and peel the potatoes. Cut them into medium cubes.
  • In a large pot, place the potatoes in cold salted water. Bring to a boil and cook until the potatoes are tender but still firm. This usually takes 10 to 15 minutes after the water boils. Drain the potatoes and let them cool.
  • While the potatoes cool, prepare the hard-boiled eggs, chop the celery, red onion and pickles.
  • In a large bowl, combine the boiled potatoes, chopped hard-boiled eggs, celery, red onion and pickles.
  • In a small bowl, mix mayonnaise, mustard, vinegar, salt and pepper. Pour this mixture over the salad ingredients and stir gently to coat all the ingredients.
  • Refrigerate the salad for at least 1 hour before serving so that the flavors blend and the salad is well chilled.
  • Before serving, garnish with fresh parsley.
