Paraguayan Soup Cake

Ingredients

2 cups cornmeal

2 cups grated cheese (traditionally, semi-cured cheese)

2 cups of milk

2 eggs

1 large onion, chopped

4 tablespoons butter or oil

Salt to taste
Preparation mode
- Preheat the oven to 180°C.
- In a frying pan, sauté the onion in butter or oil until soft and translucent. Set aside.
- In a large bowl, mix together the cornmeal, grated cheese and a pinch of salt.
- Add the beaten eggs and milk to the cornmeal mixture and stir well until all ingredients are combined.
- Add the sautéed onion to the mixture and stir again.
- Grease a baking dish with butter or oil and pour the mixture into it.
- Bake in the preheated oven for about 40-50 minutes, or until the top is golden brown and the soup is set.
- Remove from the oven and let cool for a few minutes before serving.
