  • 2 ripe bananas

  • 2 eggs

  • 1/2 cup vegetable oil (can be replaced with coconut or apple oil)

  • 1 cup brown sugar (or other sweetener of your choice)

  • 1 teaspoon of vanilla essence

  • 1 1/2 cup rolled oats

  • 1 cup whole wheat flour

  • 1 teaspoon of baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon of cinnamon powder (optional)

  • 1/2 cup chopped walnuts or chestnuts (optional)

Preparation mode

  • Preheat the oven to 180°C. Grease a cake pan with a little oil or butter and sprinkle with flour.
  • In a large bowl, mash the ripe bananas with a fork until puree.
  • Add eggs, vegetable oil and vanilla essence to the banana puree. Mix well.
  • In another bowl, mix the oats, whole wheat flour, baking powder, baking soda, salt and cinnamon (if using).
  • Gradually add the dry ingredients to the banana mixture, stirring until everything is well combined. If desired, add walnuts or chestnuts and mix.
  • Pour the batter into the prepared pan and smooth the surface.
  • Bake in the preheated oven for approximately 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
