See the list of ingredients you will need to prepare the shortcrust pastry. Follow the instructions:


  • 200g wheat flour

  • 100g cold butter, cut into small cubes

  • 1 pinch of salt

  • 1 tablespoon sugar (optional, for sweet recipes)

  • Ice water (approximately 4 tablespoons)

Preparation mode

  • In a large bowl, mix the wheat flour with the salt. If you are making a sweet recipe, add the sugar at this point.
  • Add the cubes of cold butter to the bowl. Use your fingertips or a pastry cutter to fold the butter into the flour until the mixture resembles coarse crumbs.
  • Add the ice water, one tablespoon at a time, stirring gently after each addition. Stop adding water once the dough starts to come together.
  • Gather the dough into a ball, wrap it in plastic wrap and refrigerate for at least 30 minutes. This helps the butter to solidify again and the dough to rest.
  • Preheat the oven according to the recipe you are following.
  • After cooling time, roll out the dough on a floured surface and fit it into a pie pan, if applicable.
  • Bake as directed in your specific recipe. Keep in mind that for some recipes you may need to pre-bake the dough before adding the filling.
