  • 400g pasta (such as spaghetti, fettuccine or linguine)

  • 200g bacon or pancetta, cut into cubes

  • 3 large eggs

  • 1 cup (approximately 100g) grated Parmesan cheese

  • 1 cup (approximately 100g) grated pecorino cheese (or substitute with more parmesan)

  • Freshly ground black pepper, to taste

  • Salt, to taste

  • Extra virgin olive oil

Preparation mode

  • Cook the pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve a cup of the cooking water before draining the pasta.
  • Preparing the ingredients: While the pasta is cooking, heat a tablespoon of olive oil in a large skillet over medium heat. Add the bacon or pancetta and cook until golden and crispy. Remove the skillet from the heat.
  • Prepare the egg and cheese mixture: In a bowl, beat the eggs. Add the grated parmesan cheese and pecorino cheese. Mix well.
  • Assembling the dish: When the pasta is ready, drain it and transfer it to the frying pan with the bacon or pancetta. Mix well, making sure the batter is well coated with the bacon flavor.
  • Adding the egg and cheese mixture: Pour the egg and cheese mixture over the pasta, stirring quickly to prevent the eggs from overcooking. The idea is to create a creamy sauce.
  • Adjust the consistency: If necessary, add a little of the reserved cooking water to adjust the consistency of the sauce. This helps make it creamier.
  • Season and serve: Season with freshly ground black pepper to taste. Remember that the bacon or pancetta is already salty, so test before adding more salt. Serve immediately, sprinkled with more Parmesan cheese, if desired.
