  • Cook the pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve a cup of the cooking water before draining the pasta.
  • Preparing the ingredients: While the pasta is cooking, heat a tablespoon of olive oil in a large skillet over medium heat. Add the bacon or pancetta and cook until golden and crispy. Remove the skillet from the heat.
  • Prepare the egg and cheese mixture: In a bowl, beat the eggs. Add the grated parmesan cheese and pecorino cheese. Mix well.
  • Assembling the dish: When the pasta is ready, drain it and transfer it to the frying pan with the bacon or pancetta. Mix well, making sure the batter is well coated with the bacon flavor.
