Ingredients

1 cup of lentils

1 bay leaf

1 small onion chopped

1 chopped red pepper

1 small chopped cucumber
-
1 large chopped tomato
-
1 grated carrot
-
2 tablespoons chopped parsley

2 tablespoons chopped chives
-
1 clove of minced garlic
-
Juice of 1 lemon
-
3 tablespoons olive oil

Salt and pepper to taste
Preparation mode
- Wash the lentils well under running water.
- In a medium saucepan, add the lentils and cover with water.
- Add the bay leaf and a pinch of salt.
- Cook over medium heat for about 20-25 minutes, or until the lentils are tender but still firm. Don’t let them fall apart.
- Drain and discard the bay leaf. Let it cool.
- While the lentils cool, prepare the vegetables.
- In a large bowl, combine the onion, pepper, cucumber, tomato, carrot, parsley, chives and garlic.
- Add the cooked and cooled lentils to the bowl with the vegetables.
- Drizzle with lemon juice and olive oil.
- Season with salt and pepper to taste.
- Mix all the ingredients well until they are well combined.
- Refrigerate for at least 30 minutes to allow the flavors to blend.
- Serve cold.
