  • 500g medium prawns, peeled and cleaned

  • 2 tablespoons olive oil

  • 1 medium onion, chopped

  • 2 garlic cloves, chopped

  • 1 red pepper, chopped

  • 1 yellow pepper, chopped

  • 1 cup chopped tomatoes (you can use canned tomatoes)

  • 1/2 cup green olives, pitted, chopped

  • 1/2 cup peas (can be frozen)

  • 1 teaspoon dried oregano

  • 1/2 cup chicken broth

  • Salt and pepper to taste

  • 1/2 cup crumbled feta cheese

  • Chopped parsley to decorate

Preparation mode

  • Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until they are soft.
  • Add the chopped peppers and sauté for a few more minutes, until they start to soften.
  • Add the chopped tomatoes, green olives, peas, oregano, chicken broth, salt and pepper. Cook for about 10 minutes, stirring occasionally, until the vegetables are tender and the sauce is slightly reduced.
  • Add the prawns and cook for another 3-5 minutes, or until they are pink and cooked through.
  • Sprinkle the crumbled feta cheese over the top of the dish and let it melt slightly.
  • Serve the Greek shrimp with white rice or crusty bread. Decorate with chopped parsley before serving.
