  • Massa
  • 1 and 1/4 cups of wheat flour

  • 1/2 cup cold butter, cut into cubes

  • 1/4 cup ice water

  • A bit of salt

  • 1 cooked and shredded chicken breast

  • 1 cup grated Gruyère or Swiss cheese

  • 1/2 cup grated parmesan cheese

  • 1/2 cup of cream

  • 1/2 cup of milk

  • 4 eggs

  • 1 small onion, chopped

  • 1 clove of garlic, chopped

  • Salt and pepper to taste

  • Fresh herbs to taste (such as parsley or chives)

Preparation mode

  • In a bowl, mix the wheat flour and salt.
  • Add the cold butter and mix until it forms a crumb-like texture.
  • Add the ice water little by little, stirring until a dough forms.
  • Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
  • After the rest time, roll out the dough on a floured surface and line a quiche mold.

  • Preheat the oven to 180°C.
  • In a pan, sauté the onion and garlic until golden.
  • Add the shredded chicken and sauté for a few more minutes.
  • In a bowl, mix the eggs, cream, milk, cheeses, herbs, salt and pepper.
  • Add the chicken mixture to the dough in the quiche pan.
