Ingredients

  • 2 cups of cornmeal

  • 1 cup of wheat flour

  • 1/2 cup sugar (optional, if you prefer a sweeter touch)

  • 1 tablespoon of dry yeast

  • 1 tsp of salt

  • 2 Eggs

  • 1/4 cup melted butter

  • 1 cup of warm milk

  • 1/2 cup green corn (can be fresh or can)

Preparation mode

  • In a large bowl, mix corn flour, wheat flour, sugar and salt. Reserve.
  • Mix the yeast with the warm milk and let it rest for about 5 minutes, until foaming.
  • Beat the eggs and mix with the melted butter. Then add the milk with yeast and stir well.
  • Pour the liquid mixture into the bowl with dry ingredients. Add the green corn and mix until it forms a homogeneous mass.
  • Cover the bowl with a clean cloth and let the dough rest for about 1 hour in a warm place until double in size.
  • Transfer the dough to a greased bread shape and bake in preheated oven at 180 ° C for about 35 to 40 minutes, or until the bread brings up and the toothpick comes out clean as it is spiked.
  • Remove from oven and let cool just before slicing. Serve with butter or jam if desired.
