Ingredients

  • 3 cups (360g) wheat flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 cup (200g) sugar

  • 1 cup (225g) unsalted butter, at room temperature

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 teaspoon almond extract (optional)

  • Royal icing or sugar icing for decorating

  • Food coloring (optional)

  • Various sweets for decoration (optional)

Preparation mode

  • In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  • In the bowl of a stand mixer, beat the butter and sugar until light and fluffy.
  • Add the egg, vanilla extract, and almond extract (if using). Beat until well combined.
  • Gradually add the flour mixture to the wet ingredients, beating on low speed until a smooth dough forms.
  • Divide the dough in half, form two disks, wrap them in plastic wrap and refrigerate for at least 1 hour.
  • Preheat oven to 180°C (350°F).
  • Line two large baking sheets with parchment paper.
  • On a lightly floured surface, roll out the chilled dough to about 1/4 inch thick.
  • Use Christmas-themed cookie cutters (trees, stars, snowmen, etc.) to cut out the dough.
  • Transfer the cookies to the prepared baking sheets, leaving space between them.
  • Bake for 8-10 minutes, or until the edges begin to brown slightly.
  • Let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  • Prepare royal icing or sugar icing according to package directions or recipe.
  • Divide frosting into small bowls and add food coloring as desired.
  • Decorate the cold cookies with icing and various sprinkles.
  • Allow the frosting to dry completely before storing the cookies in an airtight container.
