1 medium cabbage, green or purple (about 1 kg)
2 medium carrots, grated
1 red onion, finely sliced (optional)
1/2 cup mayonnaise
2 tablespoons white or apple cider vinegar
2 teaspoons of sugar
Salt and black pepper to taste
- Start by washing the cabbage well. Remove any outer leaves that may be damaged or dirty. Cut the cabbage in half and remove the tough core.
- Slice the cabbage into thin strips. You can do this with a sharp knife or use a food processor with a slicing attachment.
- In a large bowl, place the sliced cabbage and grated carrots. If using red onion, add that as well.
- In a small bowl, mix mayonnaise, vinegar, sugar, salt and black pepper. Mix well until you obtain a homogeneous sauce.
- Pour dressing over vegetables in large bowl.
- Use two salad spoons or a pair of tongs to mix the vegetables and dressing well, making sure all ingredients are covered with the dressing.
- Taste the salad and adjust the seasoning, adding more salt, pepper or sugar as needed.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving. This allows the flavors to blend and the salad becomes more flavorful.
- Serve chilled coleslaw as a side dish for your meals. It goes well with barbecue, sandwiches, burgers and other dishes.
