  • 3 medium carrots

  • 3 eggs

  • 1 cup vegetable oil

  • 2 cups of sugar

  • 2 cups of wheat flour

  • 1 tablespoon powdered yeast

  • A bit of salt

  • Preheat the oven to 180°C and grease a round mold with butter and flour.
  • Peel the carrots, cut them into small pieces and set aside.
  • In the blender, add the carrots, eggs, oil and sugar. Beat everything until you get a homogeneous mixture.
  • In a separate bowl, sift the wheat flour, baking powder and salt. Then add the liquid mixture from the blender little by little, stirring gently with a spoon or spatula until all the ingredients are well incorporated.
  • Pour the batter into the previously prepared mold and bake for approximately 40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool in the pan for a few minutes. Then unmold and wait to cool completely on a wire rack before serving.
