Ingredients

  • 4 ripe bananas (the riper, the sweeter the ice cream)

  • 2 tablespoons lemon juice (optional, helps preserve color)

  • 2-4 tablespoons honey, maple syrup, or sweetener of your choice (optional, depending on desired sweetness)

  • 1/2 cup heavy cream or coconut milk (optional, for a creamier texture)

Preparation mode

  • Peel the bananas and cut them into slices. Place them in a plastic bag or airtight container and place them in the freezer for at least 2 hours, or until they are frozen.
  • Once the bananas are frozen, place them in a food processor or blender.
  • Add lemon juice (if using) and sweetener (if using) to the bananas.
  • Pulse or blend the bananas until they are completely crushed and have an ice cream consistency. You may need to stop and scrape the sides of the food processor or blender a few times to make sure everything is mixed well.
  • If using heavy cream or coconut milk, add it to the banana mixture and pulse again until well combined.
  • Transfer the banana ice cream to an airtight container and return it to the freezer for about 1 hour to firm up a little more, if you want a firmer consistency.
  • Serve the banana ice cream alone or with toppings of your choice, such as chopped nuts, grated chocolate, or fresh fruit.
