  • 1 banana madura

  • 2 eggs

  • 2 tablespoons tapioca (or tapioca flour)

  • A pinch of ground cinnamon (optional)

  • A pinch of salt (optional)

  • Coconut oil or butter to grease the pan

Preparation mode

  • Peel the banana and mash it in a bowl until it forms a puree.
  • Add the eggs to the bowl and mix well with the mashed banana.
  • Add the tapioca to the mixture and stir until smooth.
  • If desired, add a pinch of ground cinnamon and salt, mixing well.
  • Heat a nonstick skillet over medium heat.
  • Grease the pan with a little coconut oil or butter.
  • Pour enough of the mixture into the heated pan to cover the bottom of the pan.
  • Let it cook for about 2-3 minutes, until the bottom is set and starting to brown slightly.
  • Using a spatula, carefully flip the crepe and let it cook for another 1-2 minutes on the other side, until it is completely cooked.
  • Repeat the process with the remaining dough, greasing the pan as necessary.
  • Remove the crepioca from the pan and place on a plate.
  • Serve hot, with fresh fruit, honey, yogurt or whatever you prefer.
