Ingredients

  • 2 medium zucchini, sliced

  • 2 medium carrots, peeled and sliced

  • 1 red bell pepper, cut into strips

  • 1 yellow pepper, cut into strips

  • 1 large onion, sliced

  • 2 cloves of minced garlic

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh or dried herbs (such as thyme, rosemary or oregano) to taste

Preparation mode

  • Preheat the oven to 200°C.
  • In a large bowl, mix all the chopped vegetables and minced garlic.
