1 banana madura

2 eggs

2 tablespoons tapioca (or tapioca flour)

A pinch of ground cinnamon (optional)

A pinch of salt (optional)

Coconut oil or butter to grease the pan
Preparation mode
- Peel the banana and mash it in a bowl until it forms a puree.
- Add the eggs to the bowl and mix well with the mashed banana.
- Add the tapioca to the mixture and stir until smooth.
- If desired, add a pinch of ground cinnamon and salt, mixing well.
- Heat a nonstick skillet over medium heat.
- Grease the pan with a little coconut oil or butter.
- Pour enough of the mixture into the heated pan to cover the bottom of the pan.
- Let it cook for about 2-3 minutes, until the bottom is set and starting to brown slightly.
- Using a spatula, carefully flip the crepe and let it cook for another 1-2 minutes on the other side, until it is completely cooked.
- Repeat the process with the remaining dough, greasing the pan as necessary.
- Remove the crepioca from the pan and place on a plate.
- Serve hot, with fresh fruit, honey, yogurt or whatever you prefer.
