Ingredients

2 eggs

50 ml of water

1/2 lemon squeezed

1/2 tablespoon of baking powder

1 cup cornstarch/corn starch

2 tablespoons coconut oil

4 tablespoons of demerara sugar

1 pinch of salt
Preparation mode
- In a container place the sugar, eggs and beat well.
- Add the lemon juice, water, oil, cornstarch/cornstarch and mix well.
- Add the salt, baking powder and mix until smooth.
- Transfer the dough to greased cupcake pans.
- Bake in a preheated oven at 180º₢ for about 20 minutes.
- Wait for the cupcakes to cool before unmolding them and they are ready.
