
This stuffed eggplant is great for lunch and dinner. It’s very healthy and delicious!

To prepare your stuffed eggplant you will need the ingredients below and follow the preparation instructions.
Ingredients

2 medium eggplants

1 tablespoon olive oil

1 chopped onion

2 cloves of garlic, chopped

200g ground beef (optional, for a meat version)

1 chopped tomato
-
1/2 chopped pepper (optional)

Salt and pepper to taste

Grated cheese (optional)

Chopped parsley or cilantro for garnish
Preparation mode
- Preheat the oven to 200°C.
- Wash the eggplants and cut them in half lengthwise. Carefully remove part of the pulp, leaving a border of approximately 1 cm. Reserve the removed pulp.
- In a pan, heat the oil and sauté the onion and garlic until golden.
- If using ground beef, add it to the pan and cook until fully cooked.
- Add the chopped eggplant pulp, tomato and pepper to the pan. Season with salt and pepper to taste. Cook for a few more minutes until the vegetables are soft.
- Remove from heat and stuff the eggplant halves with this mixture.
- If desired, sprinkle grated cheese on top of the stuffed eggplants.
- Place the eggplants on a baking tray and place in the preheated oven for about 20-25 minutes, or until they are soft and golden.
- Remove from the oven and serve hot, garnishing with chopped parsley or coriander on top.
