Ingredients

  • 1 kg of meat (can be breast, shoulder, chuck or other meat of your choice)

  • 2 tablespoons of oil

  • 2 cloves of garlic, chopped

  • 1 medium onion chopped

  • 2 chopped tomatoes without skin and seeds

  • 1 bay leaf

  • 1/2 cup tomato sauce

  • 1 cup of water

  • Salt and pepper to taste

  • Chopped green chili to taste

Preparation mode

  • Season the meat with salt and pepper to taste.
  • If you wish, you can make small cuts in the meat so that the seasonings penetrate better.
  • Heat the oil in the pressure cooker.
  • Add the meat and brown well on all sides. This process is important to seal the meat and maintain the juices.
  • Remove the meat from the pan and set aside.
  • In the same pan, add the garlic and onion and sauté until golden.
  • Add the tomatoes and sauté until they start to break down.
  • Place the meat back in the pan and add the bay leaf.
  • Add the tomato sauce and water.
  • Cover the pressure cooker and, after reaching pressure, cook for approximately 40 minutes over medium heat.
  • After the cooking time, turn off the heat and wait for the pressure to release naturally.
  • Carefully open the pan, check the doneness of the meat (it should be tender) and adjust the salt, if necessary.
  • If you want a thicker sauce, leave the pan uncovered over low heat to reduce the sauce.
  • Sprinkle chopped green chillies over the meat before serving.
