Ingredients

  • 1 cup arborio rice or carnaroli

  • 300g of meat (can be filet mignon, rump, or other meat of your choice) cut into small cubes

  • 1 medium onion chopped

  • 2 cloves of garlic, chopped

  • 1/2 cup dry white wine

  • 1.5 liters of meat or vegetable broth (can be homemade or ready-made)

  • 1/2 cup grated parmesan cheese

  • 2 tablespoons of butter

  • Salt and pepper to taste

  • Chopped parsley to finish (optional)

Preparation mode

  • In a pan, heat a little olive oil and brown the meat already seasoned with salt and pepper. Reserve.
  • In the same pan, add a little more olive oil if necessary and sauté the onion and garlic until golden and soft.
  • Add the rice and sauté for about 2 minutes, stirring constantly.
  • Add the white wine and stir until it evaporates completely.
  • Begin adding the beef broth, ladle by ladle, stirring constantly and waiting for the liquid to be absorbed before adding more. Continue this process until the rice is cooked but still al dente. This should take around 15-20 minutes.
  • When the rice is almost done, add the browned meat back to the pan and stir well.
  • Turn off the heat and add the butter and parmesan cheese. Mix until the butter melts and the cheese is completely incorporated.
  • Taste and adjust seasoning if necessary.
  • Serve the risotto hot, sprinkled with chopped parsley if desired.
