2 cups of grated coconut

2 cups of sugar

1/2 cup grated parmesan cheese

3 eggs

1/4 cup melted butter

1/2 cup of milk

1 teaspoon vanilla essence (optional)

Paper muffin cups or silicone molds
Preparation mode
- Preheat the oven to 180°C and line the muffin cups with paper or use silicone molds.
- In a large bowl, combine the grated coconut, sugar and Parmesan cheese.
- In another bowl, beat the eggs. Add the melted butter, milk and vanilla extract (if using) to the beaten eggs and mix well.
- Pour the liquid mixture over the coconut, sugar and cheese mixture. Stir well to combine all ingredients.
- Fill each muffin cup with the cheesecake mixture until about 3/4 of the way full.
- Bake in the preheated oven for around 20-25 minutes, or until the queijadinhas are golden and firm to the touch.
- Remove the cheesecakes from the oven and let them cool before serving.
