  • 100 ml of extra virgin olive oil

  • Chopped sauce (optional to decorate)

Preparation mode

  • Wash the potatoes thoroughly and place them in a pan of water and salt. Cook until soft, but without crumbling (about 15-20 minutes). Drain the potatoes and let it cool slightly.
  • Place the boiled potatoes in a baking dish and, with the help of a plate or the base of a glass, slightly “punch” each one so that they are slightly crushed but without completely crumbling.
  • Drizzle the potatoes with olive oil, add chopped garlic, coarse salt, black pepper and fresh herbs (rosemary or thyme if desired). Make sure the potatoes are well covered with olive oil and spices.
  • Bake in preheated oven at 200 ° C for approximately 20-30 minutes, or until the potatoes are golden and crispy on the outside.
  • Remove from oven, adjust salt if necessary and finish with chopped fresh parsley to add a touch of color and freshness. Serve as accompaniment or main course.
