Ingredients

  • 1 medium pumpkin (approximately 1.5 kg), peeled and cut into cubes

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 4 cups vegetable broth or water

  • 1/2 teaspoon ground ginger (optional)

  • 1/4 teaspoon nutmeg (optional)

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Heavy cream or coconut milk for serving (optional)

  • Roasted pumpkin seeds for garnish (optional)

Preparation mode

  • In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Add the minced garlic and sauté for 1 more minute.
  • Add the pumpkin cubes to the pan and season with salt, pepper, ground ginger, and nutmeg (if using). Sauté for a few minutes, stirring occasionally.
