To make your chicken in the pressure cooker you will need the ingredients below. Follow the instructions for preparation.

Ingredients

  • 1 kg of chicken (can be thighs, drumsticks or a whole chicken cut into pieces)

  • 2 tablespoons of oil

  • 1 large onion, chopped

  • 3 cloves of minced garlic

  • 2 chopped tomatoes

  • 1 green pepper, chopped (optional)

  • 1 carrot, sliced ​​(optional)

  • 1 bay leaf

  • Salt and pepper to taste

  • 1 teaspoon sweet or hot paprika (optional)

  • 1 chicken bouillon cube (optional)

  • 1 cup of water

  • Chopped chives to taste (to finish)

Preparation mode

  • Season the chicken pieces with salt, pepper and paprika, if using. Set aside.
  • Heat the oil in the pressure cooker over medium heat. Add the onion and garlic, sautéing until golden brown.
  • Add the tomatoes, bell pepper and carrot, if using. Sauté for a few more minutes until the tomatoes begin to break down.
  • Place the chicken pieces in the pan and stir well so that they are coated with the seasonings and sautéed vegetables.
  • Add the bay leaf and, if desired, the crumbled chicken bouillon cube.
  • Pour in the cup of water, stirring well so that the liquid is evenly distributed.
  • Cover the pressure cooker and increase the heat. When the cooker starts to hiss, reduce the heat to low and cook for about 15-20 minutes.
  • After the cooking time, turn off the heat and wait for the pressure to release naturally or release the pressure according to the instructions on your cooker. Open the cooker carefully.
  • Check that the chicken is cooked through and adjust the salt and pepper if necessary.
  • Sprinkle the chopped chives over the chicken and serve hot. This dish goes very well with white rice and a green salad.
