Ingredients

1 liter of water

1 cup cornmeal (approximately 200g)

1 teaspoon of salt

2 tablespoons of butter

50g grated parmesan cheese (optional)
Preparation mode
- Heat the water over medium-high heat in a large saucepan until it starts to boil.
- In a separate bowl, dissolve the cornmeal in a little cold water, mixing well to avoid lumps.
- When the water is boiling, add the salt, then slowly pour the dissolved cornmeal mixture into the pan, stirring constantly with a whisk or wooden spoon to prevent lumps from forming.
- Reduce the heat to low and continue stirring the polenta regularly. Cook for about 30-40 minutes, or until the polenta is cooked through and creamy. If it starts to thicken too much, add a little more hot water and continue stirring.
- When the polenta is ready, remove from the heat and add the butter and Parmesan cheese, mixing well until they are fully incorporated and the polenta is creamy.
- Serve the soft polenta hot as an accompaniment to meat, vegetables or as a main dish with your choice of sauce.
