Peggy promoted organic, plant-based eating long before it became trendy. In 2012 she opened her vegetarian restaurant, Grassroots Pantry, and since then her influence has only grown. She launched her Collective Table initiative in 2017, which challenges chefs to cook more sustainably, and in 2018 was invited to cook at the James Beard Foundation in New York on International Women’s Day. The chef and social entrepreneur is also co-director of Zero Waste Alliance of Restaurants HK and an ambassador for Green Monday.
