Chef Julien Royer is the culinary mastermind behind three-Michelin-starred Odette at National Gallery Singapore. Under his helm, the restaurant has been inducted into Les Grandes Tables du Monde (the second restaurant in Singapore to be accorded the honour by the esteemed restaurant guide) and is a constant on the World's 50 Best Restaurants list. The chef himself debuted on the 2017 edition of the annual Le Chef’s 100 Best Chefs in the World list. Just as his first restaurant was named after his grandmother, he named his second restaurant Claudine, which opened in November 2021, after his mother.
