Chef Julien Royer is the culinary mastermind behind three-Michelin-starred Odette at National Gallery Singapore. Under his helm, the restaurant has been inducted into Les Grandes Tables du Monde (the second restaurant in Singapore to be accorded the honour by the esteemed restaurant guide) and is a constant on the World's 50 Best Restaurants list. The passionate chef himself debuted on the 2017 edition of the annual Le Chef’s 100 Best Chefs in the World list. On the attention he has received, the Frenchman once said: “A big challenge for me is finding a balance between what I need to do outside the kitchen, like meetings and interviews, and what I want to do in it.” However, he says, none of this would have been possible without his most treasured possession: his grandmother’s recipe book. Above all, he says, “I never forget the importance of humility and perseverance.”
