500g pasta (of your choice)

2 cans of sardines in oil (or water), drained and shredded

2 cloves of garlic, chopped

1 medium onion chopped

2 ripe tomatoes, chopped (or 1 can of peeled tomatoes)

1/2 cup sliced ​​green or black olives

1/4 cup olive oil

Salt and pepper to taste

1 teaspoon of oregano
-
1/4 cup chopped parsley
-
Grated parmesan cheese (optional)
Preparation mode
- Cook the pasta in a large pot of salted water, following package instructions. Drain and reserve.
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the chopped garlic and sauté for another minute, being careful not to burn it.
- Add the chopped tomatoes (or peeled tomatoes) to the pan and cook for about 5-7 minutes, until the tomatoes are very soft and form a sauce.
- Add the shredded sardines to the pan and mix well.
- Add the sliced ​​olives, oregano, salt and pepper to taste. Cook for a few more minutes so the flavors blend.
- Add the cooked pasta to the skillet and mix well so that the sauce coats all the pasta.
- If necessary, add a little of the pasta cooking water to make the sauce more fluid.
- Turn off the heat and add the chopped parsley.
- Serve immediately, with grated Parmesan cheese on top, if desired.
