Ingredients

  • 300g pasta (penne, fusilli or other pasta of your choice)

  • 1 bunch of broccoli, cut into florets

  • 2 tablespoons olive oil

  • 3 cloves of garlic, chopped

  • 1/2 cup grated parmesan cheese

  • Salt and pepper to taste

  • Juice of half a lemon (optional)

  • 1/4 cup toasted walnuts or almonds (optional)

  • 1/2 cup heavy cream (optional for a creamier version)

Preparation mode

  • In a large pot of boiling, salted water, cook the pasta according to package instructions. When it is al dente, drain and set aside.
  • While the pasta is cooking, in another pan of boiling salted water, cook the broccoli florets for about 3-4 minutes until they are tender but still firm. Drain and reserve.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped garlic and sauté until lightly browned.
  • Add the broccoli to the pan and mix well, sautéing for another 2-3 minutes. Season with salt and pepper to taste.
  • Add the cooked pasta to the skillet with the broccoli and garlic. Mix well so that the pasta is well coated with the olive oil and garlic.
  • If you want a creamier version, add the cream and mix well, heating until it is well incorporated.
  • Remove from the heat and add the grated Parmesan cheese, mixing well.
  • Squeeze the lemon juice over the pasta, if using, and toss again.
  • For an extra touch, add toasted walnuts or almonds on top before serving.
  • Serve immediately, with more grated Parmesan cheese if desired.
