Ingredients

  • 4 ripe tomatoes

  • 1 medium onion chopped

  • 3 cloves of garlic, chopped

  • 2 tablespoons olive oil

  • 1 bay leaf

  • 1 teaspoon of sugar

  • Salt to taste

  • Black pepper to taste

  • Fresh basil (optional)

  • Grated parmesan cheese (optional)

Preparation mode

  • Make an “X” shaped cut on the bottom of each tomato.
  • Place the tomatoes in a pan of boiling water for about 1 minute.
  • Remove the tomatoes and place them in a bowl of ice water to cool quickly.
  • Remove the skin from the tomatoes starting with the “X” cut.
  • Chop the tomatoes into small cubes.
  • In a large pan, heat the olive oil over medium heat.
  • Add the chopped onion and sauté until transparent.
  • Add the chopped garlic and sauté for another 1-2 minutes, being careful not to burn the garlic.
  • Add the chopped tomatoes to the pan.
  • Add the bay leaf.
  • Season with salt, black pepper and sugar.
  • Let it cook over low heat for about 20-30 minutes, stirring occasionally, until the sauce thickens and the tomatoes are cooked through.
  • Remove the bay leaf.
  • If desired, add fresh basil leaves for additional flavor.
  • Taste and adjust seasoning if necessary.
  • Serve the sauce hot over the cooked pasta of your choice.
  • Sprinkle with grated Parmesan cheese, if desired.
