Ingredients

4 ripe tomatoes

1 medium onion chopped

3 cloves of garlic, chopped

2 tablespoons olive oil

1 bay leaf

1 teaspoon of sugar

Salt to taste

Fresh basil (optional)

Grated parmesan cheese (optional)
Preparation mode
- Make an “X” shaped cut on the bottom of each tomato.
- Place the tomatoes in a pan of boiling water for about 1 minute.
- Remove the tomatoes and place them in a bowl of ice water to cool quickly.
- Remove the skin from the tomatoes starting with the “X” cut.
- Chop the tomatoes into small cubes.
- In a large pan, heat the olive oil over medium heat.
- Add the chopped onion and sauté until transparent.
- Add the chopped garlic and sauté for another 1-2 minutes, being careful not to burn the garlic.
- Add the chopped tomatoes to the pan.
- Add the bay leaf.
- Season with salt, black pepper and sugar.
- Let it cook over low heat for about 20-30 minutes, stirring occasionally, until the sauce thickens and the tomatoes are cooked through.
- Remove the bay leaf.
- If desired, add fresh basil leaves for additional flavor.
- Taste and adjust seasoning if necessary.
- Serve the sauce hot over the cooked pasta of your choice.
- Sprinkle with grated Parmesan cheese, if desired.
