  • 6 large onions, thinly sliced

  • 3 tablespoons butter

  • 2 tablespoons of wheat flour

  • 6 cups of beef or vegetable broth

  • 1 cup white wine (optional)

  • Salt and pepper to taste

  • Slices of bread (baguette or other bread of your choice)

  • Grated Gruyère cheese (or other cheese of your choice)

Preparation mode

  • In a large saucepan, melt the butter over medium heat. Add the sliced ​​onions and cook, stirring occasionally, until golden brown and caramelized, about 20-30 minutes.
  • Sprinkle the flour over the caramelized onions and stir well to combine. Cook for a few more minutes to cook the flour.
  • Add the white wine (if using), stirring well to deglaze the pan and loosen any browned bits from the bottom. Let simmer for a few minutes to reduce slightly.
  • Pour the beef or vegetable broth into the pot, stirring well to combine. Bring the soup to a boil, then reduce the heat to low. Simmer for about 20-30 minutes to allow the flavors to develop.
  • While the soup is cooking, preheat the oven and place the bread slices on a baking sheet. Bake until crispy and lightly browned.
  • When the soup is ready, season with salt and pepper to taste.
  • To serve, ladle the soup into individual bowls. Place one or two slices of toasted bread on top of the soup and top generously with grated cheese.
  • Place the bowls in the preheated oven for a few minutes, just enough for the cheese to melt and start to bubble.
  • Serve hot and enjoy!
