- Wash the cilantro and parsley well and remove the thicker stems.
- Peel the garlic cloves and onion.
- In a blender or food processor, place the cilantro, parsley, garlic and onion cut into small pieces.
- Add lemon juice, olive oil, salt and pepper, if using.
- Blend all the ingredients until you get a smooth mixture with the desired consistency. If necessary, add a little more olive oil to achieve the desired texture.
- Taste and adjust seasoning as desired, adding more salt, lemon or pepper if necessary.
- Transfer the green sauce to a container and serve as a side dish for meat, fish, salads or snacks.
- Store any unused sauce in an airtight container in the refrigerator for up to a week.
