Ingredients

  • 1 large head of garlic (or 2 small ones)

  • 1/2 cup extra virgin olive oil

  • Salt to taste

  • Ground black pepper to taste (optional)

Preparation mode

  • Preheat the oven to 180°C.
  • Cut the top off the head of garlic to expose the garlic cloves.
  • Place the head of garlic on a sheet of aluminum foil and drizzle with a little olive oil.
  • Wrap the head of garlic tightly in aluminum foil.
  • Bake in the preheated oven for about 30 to 40 minutes, or until the garlic cloves are soft and golden.
  • Remove the head of garlic from the oven and let it cool a little.
  • Once cool enough to handle, squeeze the roasted garlic cloves out of their skins and place them in a food processor or blender.
  • Add remaining olive oil, salt and ground black pepper, if using.
  • Blend everything until you get a smooth paste. If necessary, add more olive oil to reach the desired consistency.
  • Transfer the garlic paste to a clean, airtight container and store in the refrigerator for up to two weeks.
