Made with cornflake, typical ingredient found in almost all regions of Brazil, the cake is perfect for an afternoon coffee or to accompany that special tea. Its preparation is simple and results in a damp cake with a slightly golden crust and a soft interior.

2 cups of cornflake

1 cup of leite

1/2 cup oil

3 eggs

1 cup of sugar

1/2 cup grated coconut (optional, for a special touch)

1 tablespoon baking powder
Preparation mode
- Preheat the oven at 180 ° C and grease an average shape with butter and flour or use parchment paper.
- In a blender, beat eggs, oil, milk and sugar until smooth.
- With the blender still on, gradually add the corn flake. Beat until the mixture is well incorporated.
- Transfer the dough to a bowl and, with the aid of a spatula, gently mix the baking powder and the grated coconut if using.
- Pour the dough into a greased pan and bake for about 35-40 minutes, or until the cake is golden and firm to the touch. Do the toothpick test: If it comes out clean, it’s ready.
- Remove the cake from the oven, let cool for a few minutes and unmold. Serve with coffee or tea.
